Formaggio a pasta bianca e compatta, morbida e dolce col sentore di latte, prodotta con latte di pecora intero pastorizato. Crosta bianca e sottile, prende il nome dal famoso villaggio nuragico, come a ricordare la tradizione casearia dei suoi operosi abitanti, tramandata sino a nostri giorni.

Obtained from heat-treated whole goat’s milk, it is semi-cooked; the interior is white, with small sparse eyes. Of great nutritional value and highly digestible. Excellent as a second course, or to round off a meal. It makes a nice grating cheese for those who appreciate a strong, tangy condiment on their pasta. The rind is smooth, of light brown colour.
